Cranberry-Almond Green Beans
1/2 cup fresh cranberries
2 cups fresh green beans
1/2 cup slivered almonds
Salt and pepper to taste
Place cranberries in a bowl and add hot water until the berries are barely covered. Allow them to sit for about 10 minutes.
Meanwhile, wash and trim the green beans. Stir fry the beans in the olive oil over a medium heat, approximately 3 to 4 minutes. Pour cranberries and the water into the pan and continue to cook until the majority of the water evaporates. Toss in the slivered almonds and cook for another 2 minutes.
Season with salt and pepper to taste, and serve hot.
