Cranberry Oat Bread
Ingredients:
3/4 cup honey
1/3 cup vegetable oil
2 eggs
1/2 cup milk
2 1/2 cups all-purpose flour
1 cup quick-cooking rolled oats
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
2 cups fresh cranberries
1 cup chopped nuts
Directions:
Combine honey, oil, eggs, and milk in a large bowl; mix well.
Combine flour, oats, baking soda, baking powder, salt, and cinnamon in a medium bowl. Mix well. Stir honey mixture into the dry ingredients. Fold in the cranberries and nuts.
Spoon the batter into two 8 1/2-inch x 4 1/2-inch greased and floured loaf pans. Bake in preheated oven at 350ºF for 40 to 45 minutes, or until an inserted toothpick comes out nearly clean. Cool in pans on a wire rack for about 15 minutes. Remove the cranberry oat bread loaves from the pans and allow to cool completely on the wire racks.
