This was our take on a spinach salad, but obviously in pancake form. The pancakes take away any aversions one might have to spinach, such as texture or bitterness, and offer an incredibly easy way to add some greens to your diet. Really, these pancakes are GREEN.
Spinach Pancakes
Ingredients
1 cup packed fresh spinach
1 cup buttermilk
1 egg
1 tablespoon oil
1 cup flour
1 tablespoon sugar
1 teaspoon baking powder
½ teaspoon baking soda
½ teaspoon salt
Walnuts, fresh strawberries, balsamic glaze (optional)
Directions
In a blender, combine the spinach, buttermilk, egg, and oil and blend until smooth. In a separate bowl, whisk together the remaining ingredients. Whisk the wet ingredients into the dry ingredients until just combined.
Heat a large pan or griddle over medium heat and grease with butter or oil. Pour ⅓ cup batter onto the griddle and cook until bubbles form, then flip. Continue cooking until edges are fully cooked, about 2 minutes.
Add whatever toppings you want. We recommend walnuts and strawberries plus finishing it off with a balsamic glaze.
These pancakes are also very low in sugar and can easily be made with whole wheat flour for a heart-healthier option.
Note: This recipe also works great as is for a standard waffle maker for some Spinach Waffles everyone can enjoy.
