Lemon poppy seed is a well-known flavor combination often found in baked goods like muffins, but one which has since broadened its horizon to loaf breads, layer cakes and more. So we figured, why not pancakes?! Our version is bursting with both fresh lemon flavor and the soft crunch of poppy seeds and resembles the same texture as the classic muffin.
Lemon Poppy Seed Pancakes
Ingredients
1 cup flour
2 teaspoons baking powder
½ teaspoon baking soda
½ cup whole milk
4 tablespoons yogurt
1 teaspoon vanilla extract
1 tablespoon sugar
2 tablespoons vegetable oil
3 tablespoons poppy seeds
Zest and juice of 1 medium lemon
Vanilla yogurt for topping
Directions
Mix the first three ingredients together in a large bowl. Stir in the remaining ingredients until well combined and the texture is runny but still thick.
Heat a griddle or nonstick pan to medium heat. Scoop about ¼ cup batter onto the griddle and cook for 1–2 minutes (until lightly browned) before carefully flipping onto the other side. Cook for another 1–2 minutes.
Repeat with the rest of the batter.
Top with some vanilla yogurt and an extra dash of poppy seeds and lemon zest.
