There is just something so special about avocado and quinoa together. Plus, adding salad greens and a spicy dressing that also lends a hint of sweetness is a nice change to the typical mundane salad we find ourselves getting too used to eating.
Avocado Quinoa Tossed Salad with Spicy Vinaigrette
Serves 4-6
Ingredients
2 cups cooked quinoa, any type
3 cups mixed salad greens
2 ripe avocados, peeled and cubed
1 garlic clove, minced
¼ cup extra-virgin olive oil
¼ cup fresh lemon juice
2 tablespoons pure maple syrup
1 teaspoon sriracha sauce
½ teaspoon ground ginger
Salt and pepper, to taste
Directions
In a large salad bowl, combine quinoa, salad greens and avocado. In a small mixing bowl, combine garlic, olive oil, lemon juice, maple syrup, sriracha and ginger. Toss salad dressing in salad and season with salt and pepper, to taste.
Tip: Changing up the type of greens you use in this recipe each time you make it can be a real adventure. For a spicy and tangy treat, use arugula; for a more refreshing salad, try spring mixed greens; or, for a lighter salad, a combination of romaine and iceberg is particularly cool and fresh. Speaking of fresh: you can even add fresh herbs to your salad which gives out enormous flavor and is so interesting to boot.
