Avocado Pancakes
Ingredients
Pancakes
1½ cups flour
1 tablespoon baking powder
1 teaspoon salt
1 avocado
1 teaspoon lime juice
3 tablespoons honey
1 teaspoon lime zest
1 cup + 2 tablespoons buttermilk
2 eggs
½ teaspoon vanilla
Blueberry Compote
1 cup blueberries
¼ cup sugar
½ teaspoon lime zest
Directions
In a large bowl, whisk together flour, baking powder, and salt. In a medium bowl, mash avocado and lime juice with a fork until smooth. Whisk in honey, zest, and buttermilk. Add eggs and vanilla and whisk until fully combined.
Add wet ingredients to dry ingredients and stir until just combined. In a large skillet over medium-low heat, melt a pat of butter. Ladle ⅓ cup of batter into skillet. Cook until bubbles start to form and the pancake is golden underneath, about 6 minutes. Flip and cook until the other side is golden, about 4 minutes. Repeat with remaining batter.
To make compote, combine berries, sugar and zest in a saucepan over medium heat. Cook until berries begin to burst and mixture begins to bubble. Serve pancakes with warm berry compote over top.
