Avocado Pancakes Recipe

The pancake is the classic comfort food! Just imagining a short-stack of flapjacks drizzled with maple syrup will bring a smile to anybody’s face. But did you know that pancakes can be so much more? Avocado is an incredibly versatile ingredient that can be a great substitute for butter or oils because it adds creaminess and moisture. In these circumstances, avocado is a dairy free alternative that adds vitamins, minerals, and healthy fats to your recipe. Avocados are also a fruit, so they pair great with other fruits, hence our blueberry compote topper!

 

Avocado Pancakes

 

Ingredients

Pancakes
1½ cups flour
1 tablespoon baking powder
1 teaspoon salt
1 avocado
1 teaspoon lime juice
3 tablespoons honey
1 teaspoon lime zest
1 cup + 2 tablespoons buttermilk
2 eggs
½ teaspoon vanilla

Blueberry Compote
1 cup blueberries
¼ cup sugar
½ teaspoon lime zest

 

Directions

In a large bowl, whisk together flour, baking powder, and salt. In a medium bowl, mash avocado and lime juice with a fork until smooth. Whisk in honey, zest, and buttermilk. Add eggs and vanilla and whisk until fully combined.

Add wet ingredients to dry ingredients and stir until just combined. In a large skillet over medium-low heat, melt a pat of butter. Ladle ⅓ cup of batter into skillet. Cook until bubbles start to form and the pancake is golden underneath, about 6 minutes. Flip and cook until the other side is golden, about 4 minutes. Repeat with remaining batter.

To make compote, combine berries, sugar and zest in a saucepan over medium heat. Cook until berries begin to burst and mixture begins to bubble. Serve pancakes with warm berry compote over top.
